Wash and dice the aubergines then cut them into thin strips and dab dry. Cut the tomatoes into three.
Mix the crushed garlic, sandwich bread and two tablespoons of olive oil in a large bowl. Add the oregano and season with salt and pepper. Preheat the oven and place the rack in middle of the oven.
Heat a little oil in a frying pan and gently sauté the aubergines. Grease an ovenproof dish with butter and place the aubergines in the dish. Add a layer of tomatoes and sprinkle the bread, garlic and onion mix over the vegetables and brown in the oven for ten minutes. Make sure that your bake does not burn on the surface. As a precaution, you can put a sheet of aluminium foil over your dish.
Once the bake is golden brown, simple remove it from the oven and serve with a small green salad or whatever inspires you!
