For the cake -
Grease 2 x 20cm Non stick cake tins
1. Mix the 8 oz butter and 8 oz sugar in bowl and beat until smooth. Add the flour and eggs and beat once again until smooth. Divide mixture between the cake tins filling up to 3/4 full and level the surfaces.
2. Bake the cakes in the centre of a preheated oven - 180°C (350°F, gas mark 4) for 25-30 minutes, or until the cakes have risen and are golden, and spring back when lightly pressed in the centre.
3. Remove the cakes from the oven and leave them to cool in the tins for 5-10 minutes, then turn them out on to a wire rack and leave them to cool completely.
For the filling -
Butter cream - Mix the 3oz butter and icing sugar until creamy. You may need to add more butter/icing sugar to flavor to your taste.
Spread the jam over the base of one the cakes. Then spread half of the butter cream over the top of the other cake. Sandwich the two half's of each cake together.
Decoration -
Cover the cake with the remaining butter cream (this will give the rolled icing something to stick to).
Roll out the baby blue ready roll icing on a floured surface.
Repeat rolling out the chocolate brown ready roll icing. Use a knife carefully to cut out the VW symbol. Use a small brush with water to attach the chocolate icing.
